Investigations of the behaviour of pectin in casein micelle systems and their analgues
Aurelie Cucheval investigated the effects of pectin on acid milk gels, especially investigating the mechanical properties at small length scales using microrheology. The addition of polysaccharides was shown to change the network structure by bridging casein micelles. The direct interfacial interaction between pectin and casein micelle mimics was then studied in order to determine the optimal pectin fine structure for its functional properties as a stabilizer.
